Banana Nut Muffins, Healthy & Delicious


WW Oat Banana Nut Muffins

  • Serves: 6, Yield: 12 muffins




Ingredients
  • 2 large bananas, very ripe
  • 4 tablespoons honey
  • 1/2 cup skim milk
  • 1 large egg white
  • 1 tablespoon vegetable oil
  • 1/2 cup walnuts, chopped
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 3/4 cup rolled oats
  • 1 cup whole wheat flour
Directions
  1. Pre-heat oven to 400 degrees F.
  2. Line muffin cups with 12 paper inserts or spray with oil spray.
  3. In a medium size bowl, peel and mash bananas. Add honey, egg white, milk and oil. Mix well.
  4. In another bowl, mix flour, rolled oats, baking soda, salt, baking powder and chopped walnuts. Mix well.
  5. Add wet ingredients to dry and mix just until moistened well. Divide batter evenly between the 12 muffin cups and cook 18-22 minutes until slightly brown on tops or until desired doneness.
  6. Remove muffins from pan and let cool completely on wire rack.
  7. Store in refrigerator or freeze.

Hey FitFab friends!

I am just AMAZED at how fast this summer has flown by! I can't even believe we are knocking on August's door?!? In thinking of the craziness of our Back2School schedule, I can't help but think of all our go.go.going! Three kids in multiple sports, all three kids in school this year, husband in school full time, my Crazy Wrap Business! WHOA!

I am a fan of crock-pot meals during these crazy times.  Sometimes though, fast food is our only option. So, I got to thinking...How can I insure that Fast Food doesn't become FAT FOOD? I started doing some research, I put together a list of options for you! If you can't get your crock-pot meal together, if you can't pack a healthy dinner, what options do you have? Check out my list, for some "healthier" ideas for families on the GO!
